Batzina – Greek zucchini pie

This last week I feel this huge need for cooking. 😀 This is very unlike me, because Primož is usually the one cooking at our house. He is probably pleased to see my sudden interest in cooking, so that he can rest a bit from the kitchen. When I get my cook mode on I explore a lot before cooking, looking for new recipies that I can adapt in a way that they don’t contain dairy products and aren’t irritable for my stomach. All the herbs I use in our dishes, except salt and pepper, are from our terrace garden.

With this dish, I kind of took Primož with me to Greece, more precisely to the Thessaly region. In the original the dish should contain only olive oil, water or milk and feta cheese. But modern versions are also made of eggs, zucchini,… Cheese in the pie was replaced by nutritional yeast. Maybe next time I will try to use vegan Violife’s feta cheese that Primož and I like.

Pie is prepared rather quickly. The only downside is that baking takes quite a while to finish. 😀 We baked it around 1 hour and 15 minutes. The worst part was that pretty soon after we started baking it the kitchen started to smell so good and that lasted for an hour without being able to try it 😀

This pie is suitable for lunch, late dinner or even snacks if you cut it into smaller cubes.

Making the pie

Ingredients for two persons

  • 500g grated zucchinis
  • 1/2 middle sized leek
  • 3/4 cup vegetable milk
  • 1/4 cup olive oil
  • 1 1/8 cup flour
  • 1 tsp baking powder
  • 1 tbsp nutritional yeast
  • sesame seeds for sprinkling over the pie
  • herbs of your choice (summer savoury, oregano, salt, pepper, parsley, garlic powder,…)

Method

  1. Grate the zucchinis, add salt and after a while drain the fluids as much as you can.
  2. Chop your leeks and herbs.
  3. In a medium-sized container mix grated zucchini, leek, herbs and nutritional yeast.
  4. Add oil and milk to the zucchini mixture. Mix well.
  5. Gradually add a mixture of flour and baking powder.
  6. Add parchement paper to the baking pan and pour in the zucchini batter.
  7. Sprinkle with sesame seeds and bake around 75 minutes at 180°C.
